Q:  What is your culinary education background and how did that lead you to the Lake Geneva area?

A:  I worked my way up from dishwashing. Met David Scotney [owner] while working in Chicago.

 

Q:  What is your restaurant best known for?

A:  Pizza Napoletana and lakefront views.

 

Q:  What is your favorite dish to cook and why?

A:  Eggs, any style. Most people struggle just cracking them! 

 

Q:  What is your process when developing a new dish?

A:  Concept, sourcing ingredients/costing, taste testing.

 

Q:  Do you have any tips or tricks for those looking to elevate their dishes at home?

A:  Salt!
